  1. Recipe of ammini Kozhukattai.
  2. For the masala; dry roast the sesame seeds, urad Dal, chana dal and red chillies on a low flame till lentils are golden brown. Cool. Add fresh coconut and grind to a coarse masala.
  3. For the rice dumplings, dry roast rice flour till very hot to touch or for 7-8 minutes approximately. Keep aside.
  4. In a pressure cooker, add 1.5 cups of water, oil and salt. Pressure cook the water for 1 whistle. Remove the pressure manually and immediately add the rice flour. Mix well. Cover the pressure cooker and keep aside for 15 minutes. Remember it's not on stove.
  5. After 15 minutes open the cooker and knead the dough a little. Remember it's hot so be careful. Make small balls out of this Dough.
  6. Steam the rice dumplings for approximately 10-11 minutes. They should look glossy once done.
  7. For the tempering, heat 2 Tsp oil in a pan add the mustard seeds. Once the seeds crackle add curry leaves. Now add the steamed rice dumplings and the ground masala. Mix well. Yummy and healthy Ammini Kozhukattai are ready.
