Pressure cook potatoes. pour two cups of water in the cooker. cook for 3 whistles. cool, peel and cube the potatoes.heat oil in a heavy bottomed vessel, add the cumin seeds and allow to splutter. reduce flame to low, add hing and the spice powder mix and stir so that they mix in the oil, just a few seconds. do not burn the spice powders. now add the potato cubes which were kept aside.
  2. Cook until they are darkly golden and crispy, turning them over halfway through cooking.cook on a low flame approx. 8-10 minutes. Stir once in a while
  3. Served with Paruppu kulambu or keerai kulambu Steaming white rice
  4. Notes You can add cumin seeds while sauting in oil.(Optional)
