  13. Prepare 3 cups Water

  16. Make ready 6-8 dry red chillies
  17. Make ready 1 tsp Fenugreek Seeds
  18. Take 4 tbsp grated Coconut
  19. Get 5 tbsp coriander seeds
  20. Take 1.5 tsp Cumin seeds
  21. Make ready 2 tbsp chana Dal
  22. Make ready 2 tbsp urad Dal
  23. Take 1 tbsp Oil
  24. Get Vegetables:
  25. Prepare 1 Potato cubed
  26. Make ready 1 Carrot cubed
  27. Take 5-6 beans chopped
  28. Make ready 1/2 cup yellow Cucumber cubed
  29. Make ready 2-3 small brinjals chopped
  30. Prepare 1/2 cup ladies finger chopped
  31. Make ready 1 cup cubed Pumpkin
  32. Get For Seasoning
  33. Get 2 tbsp Ghee
  34. Prepare 1 tsp Mustard Seeds
  35. Get 1 tsp Hing
  36. Make ready 2 dry red chillies
  37. Get 1 tsp urad Dal
  38. Take 1/2 tsp Cumin seeds
  39. Take 1 sprig Curry Leaves
Instructions to make Udupi Sambar:
  1. Pressure cook dal with water and turmeric until completely soft. Mash dal. Keep aside
  2. In a pan, heat oil and roast all spices and coconut as mentioned under sambar masala section until brown. Allow to cool completely. Add sufficient water and grind to form paste. Keep aside
  3. In a separate big pan, heat 2 tbsp oil, fry onions, curry leaves,green chilies. Add tomatoes and fry. Add all veggies, turmeric and roast for 5 minutes until raw smell goes away. Add salt, water, cover and cook for 10 minutes until veggies are tender. Add the ground paste to veggies. Mix well
  4. Add tamarind pulp, dal and jaggery. Mix well. Now simmer and allow to cook for 15 minutes
  5. Now heat ghee and splutter mustard seeds. Add urad dal, jeera,hing, dry red chillies. Once urad dal browns, add curry leaves. Switch off
  6. Add seasoning to sambar. Mix well. Add coriander leaves. Serve hot with rice, dosa, idli Vada etc
