  1. Chop all the ingredients. Salt the aubergine for 40 minutes. Toast the peanuts in a dry pan.
  2. Heat the coconut oil in a large pan over a medium heat & saute the onion
  3. Add the chilli, onion & garlic and cook for a couple of minutes
  4. Add the spices and cook for another minute
  5. Add tomato puree and peanut butter and stir to combine.
  6. Add tomatoes and stock. Bring to the boil and simmer for 10 minutes
  7. Add vegetables and nuts, bring back to simmer and cook for 20 minutes. Season to taste
  8. Serve with rice, garnish with chopped nuts, chilli & coriander leaves
