  1. In a pot of salted water boil the potatoes until tender but still holding their shape (approx 6-10 minutes).
  2. Drain well the potatoes and allow to cool. I ran mine under cold running water to speed up the cooling process.
  3. Once cooled place the potatoes in bowl and add the onions, mayonnaise, salad cream, pepper and salt. Gently stir everything together. Add more seasoning if needed.
  4. Cover the bowl with clingfilm and place in the fridge for a minimum of one hour up to 24 hours.
  5. Just before serving add the chives in and combine everything together again.
  6. For decoration sprinkle with a a little more chives and a little ground black pepper.
